Bluebonnets: It's spring in Texas

JJ is 17 months old this weekend. He is officially in "toddler" mode. Thank goodness for Signing Time (Thanks to Matt and Teresa), JJ loves to watch the DVDs and tells us what he wants via sign language much of the time now...not to the exclusion of verbal language, of course. JJ uses 20+ words and 40+ signs....and counting.....feels like we add something new each day now.

We are all healthy, happy and enjoying spring......how about you?

I know, I know....it's been nearly a month with no new photos......more are coming soon but for now here is THE BEST RECIPE EVER! You can thank me after you make it for dinner TONIGHT! Love,

GUMBO by Dr. Margot

2 yellow onions, chopped
2 green bell peppers, chopped
1 red bell pepper, chopped
1 stalk celery, chopped
2 zucchini squash, sliced
3 cloves garlic, pressed
½ smoked turkey sausage, sliced

1 large can of diced tomatoes
1 small can of diced tomatoes
2 Tablespoons Cajun spice (Weber grill creations N’Orleans Cajun Seasoning is very good)

1 package of frozen okra
1 small package of frozen corn

2 large sweet potatoes, cooked & mashed

Put first 7 ingredients in a LARGE pot. Cover with water , so that ingredients are immersed in about 1” of water. Cook until onions are soft/translucent.
Add tomatoes and Cajun seasoning. Stir well.
Add okra and corn. Stir well.
Add mashed sweet potatoes a little at a time. Sir well. Heat on medium heat until it comes to a slow and steady boil. Turn down heat and simmer for about 45 – 60 minutes. The longer it cooks the thicker it becomes.

Serve as is or over rice.
